I’m always trying to find a way to eat more protein-rich foods. Cottage Cheese is touted as a great source of protein. The problem is I’m not too fond of the stuff, and that’s putting it mildly. I finally came up with this delicious, protein-rich pancake recipe by combining several other recipes I found online. I have to say, it’s a hit. All the benefits of cottage cheese without the nasty flavor and texture of it.
You can throw these pancakes together in 5 minutes. I don’t put any sweetener in mine, but if you want to you could add some honey or Stevia. I stay away from sugar for obvious reasons. Also, I add a bit of honey or pure maple syrup on top when I serve them. This way you can sweeten to taste. I prefer it that way. You do what you like. I don’t judge.
Ingredient List
- 1/2 cup Vital Farms Liquid Egg, or 2 whole eggs
- 1/2 cup Whole Grain Oats
- 1/4 cup Chia seeds
- 5.3 oz Good Culture Low Fat Cottage Cheese
- 1 Banana
- 1/2 tsp Cinnamon (don’t notice I accidentally put Cinnamon Sugar in the picture. I promise I didn’t use it, but I guess you can if you want to.)
- 1 tsp Vanilla Extract
- 1/4 tsp Baking Powder
- Dash of Salt
- 1/4 cup Crazy Richards Pure PB (Optional, if you like a peanut butter flavor)

Cooking Instructions
Put all ingredients in a blender. Blend until smooth, should be thick.
Preheat a non-stick pan, or use cooking spray. Add a small ladle full to the pan and cook on each side for about 40 seconds. Pile them up, add some extra banana or some berries, a drizzle of honey or maple syrup and you’re done.
I guarantee you will not even notice the cottage cheese.
